Pop em over


Nothing says breakfast like a good old popover! What? You've never heard of this? You've never tried it? Well fear not because the recipe that I will share with you is SO GOOD that you'll be making another batch beofre you finish your first! You can make these sweet savory or both. They feel like fresh bread from a bakery but are mostly made from eggs. Enjoy!

the goods:

2 tbl of butter

1/2 cup of all purpose flour

2 eggs

1 cup of milk

2 tsp of salt

the lowdown:

Preheat the oven at 400 degrees. Grease either a popover pan or a muffin/cupcake pan with the 1 tsp of butter. Combine the 1 tbl of butter, flour, salt, eggs and milk in a food processor and for 30 seconds. Or go old school and use a whisk and a bowl until combined. Divide the batter evenly among the cups of the pan, filling each one-third and not more than one half full. Bake on the middle rack of the oven for 30-35 minutes. DO NOT open the oven door earlier than that. Remove the popovers to a cooling rack and pierce each one at the top with a knife to allow steam to escape and stuff with scrambled eggs, fruit, hash or whatever you're in the mood for! Smacznego!
