Creme Brulee


Ah Dessert! Something everybody loves to eat and would do so at every single meal. Creme Brulee is one of those elegant dishes that are served at special occassions or at a romantic dinner with your sweetie. It's that combination of crunchy and soft texture that melts in your mouth and has you craving for more. Believe it or not with a few practice runs you'll be able to re-create this dish at half the price of what you end up paying at a restaurant! Mine has a little healthy twist too-

the goods:

2.5 egg yolks

3 tbl of coconut sugar

1 cup of heavy cream

2 tsp of brown sugar

1 vanilla bean

1/4 cup of blueberries

the lowdown:

Preheat oven to 300 degrees. Beat egg yolks, 3 tablespoons sugar and vanilla in a mixing bowl until thick and creamy. Pour cream into a saucepan and stir over low heat until it almost comes to boil. Remove the cream from heat. Stir cream into the egg yolk mixture and beat till combined. This is called tempering, otherwise you'll have scrambled eggs! Pour cream mixture into the top of a double boiler. Stir over simmering water until mixture lightly coats the back of a spoon. Remove mixture from heat immediately and pour into a ramekin. Bake for 30 minutes. Remove from oven and cool. Refrigerate for 1 hour or until it sets firmly. In a small bowl combine remaining 2 tablespoons coconut sugar and brown sugar. Sift this mixture evenly over custard. Place blueberries on top. Use a torch to brulee (see where the name comes from) toast the sugar until carmelized and develops a crust. You can also place it under a broiler for 2-3 minutes. Watch carefully so you won't burn it. Eat.
