It's Pasta Time!


It only takes a few ingredients that are already in your pantry to make pasta! You want to know what they are? All purpose flour, semolina, eggs and....KNEAD! Nothing else to it and within minutes you'll have a beautiful Northern Italian pasta. Here is the easiest recipe to remember: 1/2 cup of semolina, 1/2 cup of flour, 2 eggs. In a large bowl mix the two flours together and create a well in the middle. Crack the eggs into the well and break apart the yolks. With a wooden spoon work from the inside out carefully making sure everything is slowly incorporated. Soon you'll see that the dough is still a little wet and is turning into a shaggy mixture. Take out the dough and start kneading it on a dry surface such as a cutting board or countertop. Do this repeatedly for 5 minutes until you have a smooth, round and eleatic ball of dough. Cover with a damp towel or place in ziplock bag and let rest for at least 15 minutes.

Cook pasta for 2-3 minutes in rolling boil pot of water. Add to sauce and continue cooking. This will help infuse the sauce and flavor to the pasta. Also save about a cup of water from boiling the pasta. Pour that into your sauce. This will help the sauce stick to the pasta and thicken. Also, salt the water until it tastes like the Dead Sea while cooking the pasta. This will add flavor to the pasta and don't worry your dish won't e overly salty!
